Healthy Oatmeal Chocolate Chip Cookies

Healthy oatmeal chocolate chip cookies! Made with 1/3 the sugar of a regular oatmeal chocolate chip cookie. The almond flour also lowers the carbohydrates in these cookies and there is no butter.

My husband who is the biggest critic of anything “sugar free” ate it up not knowing it was healthy and said they were yummy! Also, the kids who are the other honest critics in the house; gobbled these up after school and loved them!

We turned ours into giant monster cookies by adding sprinkles, melted chocolate eyeballs and mouths and the kids loved them even more!

What you need to make healthy oatmeal chocolate chip cookies:

makes 16 large and 24 small square cookies

*Optional to make these cookies look like monsters – Sprinkles, White chocolate chips melted to form eyes and 1 semisweet chocolate chip in the middle for the pupils and red melting chocolate for the mouths.

Instructions:

  1. Preheat oven to 375 F.
  2. In a large bowl, combine almond flour, quick oats, brown sugar, stevia, salt and baking soda.
  3. Add eggs, canola oil, vanilla and stir everything together.
  4. Stir in chocolate chips.
  5. Pour cookie dough onto a greased cookie sheet and spread/press out.
  6. Bake for ~12 minutes.
  7. remove from oven and let cool on the cookie sheet.
  8. Use a knife to cut into 16-24 cookie squares.

  • 1/2 cup semi sweet chocolate chips
