Chewy Almond Cookies

I love the taste and texture of these chewy almond cookies! They are a nod to the old school flavors of my childhood. The chew in these cookies comes from the almond flour that is added to it and the flavor of almond comes from the almond extract added.

We recently went to Maui on vacation and we got shaved ice a few times. My daughter order an almond shaved ice and at first I thought it was a weird preference for a shaved ice but it surprised the whole family when it was one of the favorite snow cone flavors we had tasted.

It reminded me how much I love almond flavoring and that is reminds me of the cookies, breads, poppy seed and icings I had so many times as a child. It’s an underrated flavor profile so I wanted to make some cookies that highlighted the beauty of the flavor.

Makes 24 large cookies or 36 small cookies

Instructions

  1. Preheat oven to 350 F.
  2. Add the softened butter and sugar together in a mixing bowl and blend until butter is pale yellow.
  3. Add in the eggs and almond extract then blend well.
  4. Add the almond flour, all purpose flour, baking soda and salt and blend together until a cookie dough forms.
  5. Dough will be a little sticky but manageable in your hands. add a little more flour if dough is too sticky.
  6. Roll dough into balls around 1 inch for small cookies and 2 inches in diameter for large cookies.
  7. Add 1/3 cup of sugar to a small bowl.
  8. Roll dough balls in the sugar and place on a greased or lined cookie sheet.
  9. Bake for ~8 minutes for small cookies and ~10-12 minutes for large cookies.
  10. Let cookies cool slightly on the cookie sheet after removing from the oven then place on a cooling rack and enjoy.
