Smoked Sheet Pan Salsa

This easy to make, smoked salsa has a delicious smokiness to it and ultra-concentrated flavors.

Ingredients

  • 1 cup onions - diced
  • 5 cup tomatoes - diced
  • 1 cup bell peppers - any color - diced
  • 2 jalapenos - seeds left in for a spicy salsa or taken out for mild diced
  • 5 cloves garlic - left whole
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon sugar
  • 1 tablespoon lime juice
  • 1/2 cup water

Instructions

  • Preheat smoker or pellet grill to 400 F.
  • Prepare vegetables and place on a parchment paper lined cookie sheet.
  • Sprinkle tops with salt, black pepper and sugar.
  • Cook for 20 minutes then stir together on the sheet pan,
  • Cook another 20 minutes or until vegetables look caramelized and the liquid from the tomatoes is reduce by about 80% of what you started with.
  • Remove from cookie sheet and mix everything together. add lime juice and water and stir together.
  • Blend mixture with an immersion blender for smoother salsa or keep chunky.
  • Refrigerate overnight or for a day or two for best flavor development then enjoy!
