1ear of corn or ~1 cup corn - cut corn off the Cobb - toast it for a bit in a pan with a little oil and pinch of salt or add it rawyou can use canned or frozen corn too.
1/2cupfeta cheese or queso fresco - chunked or crumbled
1/2purple onion - dicedsautéed in a pan to take the edge off the flavor or add them raw if you like them raw
1bell pepperany color- diced
1avocado -peel and seed removedchunked up
1cupgrilled chicken
1/2cupfresh Pico de Gallo salsa - refrigerator section
1/2cuptortilla strip toppers or crushed tortilla chips
1/2cupfresh cilantro - roughly chopped
lime cilantro dressingany brand, I love wild coyote or the yogurt based cilantro lime dressing or favorite dressing)
Instructions
If cooking corn and onions, sauté in a pan then cool.
Add spring mix, corn, cheese, onion, bell pepper, avocado, grilled chicken, Pico de Gallo, tortilla strips and fresh cilantro.
You can mix this salad or serve it with everything on top for a prettier presentation.
Serve with lime cilantro salad dress or salad dressing of choice.
