Tex Mex Turkey Meatballs

Ingredients

ground turkey

cup
red onion - diced

jalapeno - seeds removed
diced
1/4
cup
minced cilantro

tablespoon
garlic - minced
1/4
teaspoon
chili powder

teaspoon
salt

teaspoon
ground black pepper
1/3
cup
quick oats
1/4
cup
milk

tablespoons
olive oil
10
ounce
can red enchilada sauce
1
cup
shredded Mexican blend cheese
Instructions
Preheat oven to 350 F.
In a mixing bowl, add ground turkey, red onion, jalapeno, minced cilantro, garlic, chili powder, salt, black pepper, quick oats and milk.
Mix everything together until it's all well mixed.
Divide meat mixture into 8 and roll into meatballs.
In an ovenproof pan, heat olive oil and brown each meatball, turning over so each side is browned.
Add red enchilada sauce over the tops of the meatballs and place in the oven for 30 minutes.
Sprinkle with cheese and bake for 10 minutes.
Serves on their own or over rice.
