Tex Mex Turkey Meatballs

Easy to make Tex Mex flavored meatballs that taste great.

Ingredients

  • 1 pound ground turkey
  • 1/4 cup red onion - diced
  • 1 jalapeno - seeds removed diced
  • 1/4 cup minced cilantro
  • 1 tablespoon garlic - minced
  • 1/4 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup quick oats
  • 1/4 cup milk
  • 3 tablespoons olive oil
  • 10 ounce can red enchilada sauce
  • 1 cup shredded Mexican blend cheese

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, add ground turkey, red onion, jalapeno, minced cilantro, garlic, chili powder, salt, black pepper, quick oats and milk.
  • Mix everything together until it's all well mixed.
  • Divide meat mixture into 8 and roll into meatballs.
  • In an ovenproof pan, heat olive oil and brown each meatball, turning over so each side is browned.
  • Add red enchilada sauce over the tops of the meatballs and place in the oven for 30 minutes.
  • Sprinkle with cheese and bake for 10 minutes.
  • Serves on their own or over rice.
