Almond Flour Enriched Dinner Rolls

All the goodness of a dinner roll with a little extra protein and healthy fats from almond flour and a few less carbohydrates.

Ingredients

  • 1 1/2 cups water
  • 1 tablespoon and 1 teaspoons dry active yeast
  • 1/2 cup butter - melted
  • 1 1/2 teaspoons salt
  • 2 1/2 cups almond flour
  • 2 1/2 cups flour - more as needed

Instructions

  • Add water and yeast together.
  • Stir in the melted butter, then salt, almond flour and flour and mixture together.
  • Knead for 5 minutes then place in greased bowl and let rise for 1 hour.
  • Gently punch dough down and roll into a large circle and cut into 20 wedges, like you would slice a pizza then starting at the widest end of the dough, roll up into a croissant style roll.
  • Place rolls onto a greased pan with enough room for the rolls to double in size.
  • Allow the rolls to rise 45 minutes or until they look nearly doubled.
  • Preheat oven to 350 F.
  • Bake 16-20 minutes or until tops are golden and rolls are cooked through.
  • Optional, brush tops with butter after baking and enjoy.
