A sweet, savory and completely delicious poke bowl made with caramelized pineapple, shrimp, honey lime dressing and delicious toppings.

Ingredients
2tablespoonssesame oil
3clovesgarlic - minced
1/2teaspoonfresh ginger - minced or 1/8 teaspoon ground dried ginger
1cuppineapple - chunkedfresh, frozen or canned
2tablespoonssoy sauce or coconut aminos
1tablespoonhoney
1/2poundsshrimp - peeled and deveined
Pinchsalt - to taste
Dash cayenne
Rice:
2cupscooked sushi rice or 2 cups cauliflower rice
Topping:
1/2cupshelled edamame or mukimame
Shredded cabbage
2green onions - diced
1avocado - diced
2tablespoonsfurikake or nori cut into pieces and sesame seeds
1cucumber - diced
Bok choy - sliced and sautéedoptional
Hot sauce - Sriracha or personal favorite for heatoptional
Honey Lime Dressing:
1tablespoonlime juice
1teaspoonhoney
1tablespoonsoy sauce
Spicy Mayo:
3tablespoonsmayonnaise
1teaspoonsriracha - for a spicier sauce add more sriracha
Instructions
Cook rice or cauliflower rice and set aside.
Add your sesame oil, garlic, ginger, pineapple, soy sauce and honey and cook until pineapple starts to gets some color.
Add the shrimp to the pan, add the salt and cayenne and cook the shrimp with the pineapple until the shrimp is pink and cooked, remove from heat.
Prep your vegetables you will be adding to the poke bowl.
Make the honey lime dressing by adding whisking those ingredients together in a bowl.
Whisk together the spicy mayo.
Assemble the bowl by adding rice, pineapple and shrimp mixture, shelled edamame, shredded cabbage, green onions, avocado, cucumber, boy choy (if using it) and whatever toppings you want.
Add a drizzle of honey lime dressing, spicy mayo and furikake or nori and sesame seeds.
