Bacon Cauliflower Alfredo Bake

Rich and delicious cauliflower and bacon bake!

Ingredients

  • ~8 cups cauliflower florets - about 1 large cauliflower head cut into bite size pieces
  • 4 cloves garlic - minced
  • 22 ounces alfredo sauce of choice - this is the family size sauce
  • 1 1/2 cups mozzarella - shredded
  • 1/4 cup parmesan cheese
  • 1 pound bacon - cut into bite size pieces

Instructions

  • Preheat oven to 350 F.
  • In a large 9 x 13 casserole dish, add cauliflower, minced garlic, alfredo sauce, mozzarella cheese, parmesan cheese and chopped bacon, (reserve about 1/3 of the bacon for laying over the top) and mix it all together.
  • Lay the remaining bacon over the top of the cauliflower alfredo mixture.
  • Cover with aluminum foil and bake for 1 hour.
  • Remove the foil and bake for another 15 minutes uncovered.
  • Optional - turn broiler on and broil top for 5 minutes or until the bacon on top crisps up.
  • Let cool slightly then enjoy!
