These bleu cheese bison burgers have bleu cheese mixed into the burgers, so you get lovely little pops of blue cheese flavor in every bite but it doesn't over power the bison.

Ingredients
1poundof ground bison16 ounces
1/2teaspoonssalt - you can season with more salt after the burger is formed if desired
3tablespoonsbleu cheese crumbles
Dash of cayenne pepper - be generous if you want some heat
1/4teaspoonsfinely ground black pepper
1teaspoonhot sauce - this just adds flavornot spice, add more if you want more spice
Grilled white mushrooms - ~2 cups sliced before cooking
1 tomato - sliced
1/2cupFrench fried onions
1/4red onion - sliced and cooked
Lettuce of choice - roughly 1 cup
Mayoketchup, mustard, BBQ sauce
Instructions
Heat grill up to 400 F.
In a bowl, add ground bison, salt, bleu cheese, cayenne pepper, black pepper and hot sauce and mix together well.
Divide into 4 portions, roll each portion into a ball and then press firmly down so a burger patty forms, round the edges if you need to.
Cook burgers on grill or in a frying pan until they are at your desired doneness.
Add to a bun with sauces of choice and toppings of choice.
