Ingredients
1 1/2poundsstick rice cakes
3tablespoonsolive oil
1medium zucchini - cut into chunks
1bunch green onions - diced
1red bell pepper - diced
1jalapeño - deseededdiced
1cuptomatoes - diced
1/2teaspoongarlic powder
1/2teaspoonblack pepper
1cupbacon bits or chopped bacon
1tablespoongochujang paste - more or less depending on spice preference
1tablespoonsoy sauce
1/4teaspoonsalt - more to taste
1cuppasta water
Instructions
In a pot of water, boil rice cakes for about 5 minutes.
In another large sauté pan, add olive oil, zucchini, green onions, bell pepper, jalapeno, tomatoes, garlic powder, black pepper and sauté until zucchini and peppers are softened.
Add bacon bits, gochujang, soy sauce and salt.
Add pasta into the pot along with a cup of water and stir together, taste and season to taste.
