Servings: 3 ounces

Ingredients

  • 1 orange - zested and juiced
  • 1 jalapeno or chili pepper of choice - seeds removed for mild seeds left in for hot
  • 2 tablespoons white vinegar
  • 3 tablespoons sugar
  • 1/4 cup honey
  • pinch of salt

Instructions

  • In a sauce pot, add orange zest, orange juice, jalapeno or chili pepper, white vinegar, sugar, honey and salt and bring mixture to a boil.
  • Simmer for roughly 5 minutes or until the peppers and orange zest have a chance to release their oils, you will smell it, the vinegar will also evaporate.
  • Remove pot from heat and for smooth honey, pour mixture through a fine mesh strainer while hot to remove the zest and peppers. If you want the honey to have peppers and zest in it then you don't need to strain it and it will make approximately 1/2 a cup instead of 1/3 cup.
  • Use immediately or store for future use.
