Instant Pot Tomatillo Pork

Delicious tomatillo spiced shredded pork roast done in a fraction of the time using an instant pot.

Ingredients

  • 2 1/2 pound pork picnic butt or shoulder roast
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon chili powder
  • 8 ounces green chilies
  • 16 ounces tomatillo salsa or salsa verde
  • 1 teaspoon garlic powder
  • 1 tablespoon sugar

Instructions

  • Place pork roast into instant pot with black pepper, salt, celery salt, chili powder, green chilies, tomatillo salsa, garlic powder and sugar.
  • Cook on high pressure for 40 minutes with a quick pressure release.
  • Once instant pot is open, shred pork with a fork or use a standing mixer with a paddle or dough hook with the sauce that it is cooked in.
  • Serve with sauce from cooking and enjoy.
