Instant Pot Tomatillo Pork
Delicious tomatillo spiced shredded pork roast done in a fraction of the time using an instant pot.

butt or shoulder roast

tomatillo salsa or salsa verde

Instructions
Place pork roast into instant pot with black pepper, salt, celery salt, chili powder, green chilies, tomatillo salsa, garlic powder and sugar.
Cook on high pressure for 40 minutes with a quick pressure release.
Once instant pot is open, shred pork with a fork or use a standing mixer with a paddle or dough hook with the sauce that it is cooked in.
Serve with sauce from cooking and enjoy.
