Sausage Christmas Breakfast Casserole

Easy to make and delicious breakfast casserole with sourdough, sausage and cheese.

Ingredients

  • 7 cups sourdough bread - about 5 slices cut into chunks
  • 7 eggs
  • 2 cups milk
  • 1 teaspoon mustard - any variety yellow, Dijon or spicy brown
  • 1/4 teaspoon black pepper more if you like black pepper
  • 1 teaspoon salt
  • 1/2 pound ground sausage - any variety
  • 1 1/2 cups shredded cheddar cheese - divided

Instructions

  • Preheat the oven to 400 F.
  • Cut bread and set aside.
  • Cook sausage and set aside.
  • In a bowl, add eggs, milk, mustard, black pepper, salt, sausage, 1 cup of cheddar cheese and mix together.
  • Add the bread chunks and sausage to egg mixture and mix well until bread is totally covered.
  • Pour mixture into a greased casserole dish and top with the remaining shredded cheese.
  • Bake for 35 minutes then broil the top for ~2 minutes until top is golden. If cooking from it being refrigerated then add an additional 10 minutes bake time .
  • Serve and enjoy.
