1 1/2cupschopped mushrooms - white or creminichopped
7clovesgarlic - diced
generous pinch of salt
dash black pepper
1/2teaspoondried Italian herbs
1poundground sausage - regularItalian or spicy
14-15ouncecan chopped tomatoes
1/2cuppasta water
1/4cupcream
1/2cupgrated or shredded parmesan cheese - more for on top
Instructions
Cook pappardelle pasta in salted water according to package directions, reserve 1/2 cup pasta water and drain remaining liquid.
While pasta is cooking, In a large skillet, add onion, olive oil, mushrooms, garlic, salt, pepper and Italian herbs and cook until onions begin to soften.
Add ground sausage and cook until sausage is browned.
Add chopped tomatoes, pasta water, cream and grated parmesan and bring mixture to a boil then reduce to a simmer.
Add pasta into sauce and stir over low heat until all of the pasta is coated.
Season with additional salt if desired then top with extra parmesan cheese and enjoy.
