Sausage and Mushroom Pappardelle

Thick pappardelle pasta with a hearty and delicious sausage and mushroom sauce.

Ingredients

  • 8 ounces pappardelle pasta
  • 1 small onion - diced
  • 2 tablespoons olive oil
  • 1 1/2 cups chopped mushrooms - white or cremini chopped
  • 7 cloves garlic - diced
  • generous pinch of salt
  • dash black pepper
  • 1/2 teaspoon dried Italian herbs
  • 1 pound ground sausage - regular Italian or spicy
  • 14-15 ounce can chopped tomatoes
  • 1/2 cup pasta water
  • 1/4 cup cream
  • 1/2 cup grated or shredded parmesan cheese - more for on top

Instructions

  • Cook pappardelle pasta in salted water according to package directions, reserve 1/2 cup pasta water and drain remaining liquid.
  • While pasta is cooking, In a large skillet, add onion, olive oil, mushrooms, garlic, salt, pepper and Italian herbs and cook until onions begin to soften.
  • Add ground sausage and cook until sausage is browned.
  • Add chopped tomatoes, pasta water, cream and grated parmesan and bring mixture to a boil then reduce to a simmer.
  • Add pasta into sauce and stir over low heat until all of the pasta is coated.
  • Season with additional salt if desired then top with extra parmesan cheese and enjoy.
