Healthy Samoas Energy Balls
Delicious, easy to make and healthy twist on a classic girls scout Samoas cookie.

Servings: 12 energy balls
- 1 cup dates - pits removed and cup packed full
- 1 cup almond flour
- 1 teaspoon coconut oil - melted
- 1 teaspoon honey
- generous pinch of salt or ~1/4 a teaspoon
- 2 tablespoons cacao powder - cocoa powder also works
- 1 cup shredded coconut - sweetened or unsweetened both work - divided
- 1 teaspoon vanilla extract
- 2 tablespoons water
In a food processor or blender, add dates, almond flour, coconut oil, honey, salt, cacao powder, 1/2 of the shredded coconut, vanilla and water and pulse until the dates are chopped up and everything is well combined.
Remove from food processor or blender and place on a sheet of parchment paper.
Roll into 12 individual balls and roll in the remaining shredded coconut.
Enjoy and keep leftovers in the refrigerator.
