Ingredients
3jumbo onionsabout 6 cups - thinly sliced, any variety
3tablespoonssalted butter
2tablespoonsolive oil
1 1/2teaspoonssalt
1 1/2teaspoonsdried Italian herbs or dried thyme
64ouncesbeef stock or broth
1tablespoonbalsamic vinegar
4cupssourdough bread - cut into pieces(optional to toast the bread)
2 1/2cupsshredded gruyere cheese or cheese of choiceI used an alpine cru and Havarti mixed
Instructions
Add onions, butter and olive oil to instant pot.
Select sauté and sauté onions for ~3 minutes.
Add salt, herbs and beef stock and put the lid on the instant pot.
Cook on high pressure for 15 minutes with a quick release.
Remove lid and when ready to serve, add sourdough bread pieces and cheese.
You can place the lid back on the instant pot and wait for the cheese to melt or dish up the soup in a oven proof dish, add cheese and then broil in an oven for 1-2 minutes or until cheese is melted.
