Asian Vegetable and Dumpling Soup

Simple but delicious Asian inspired vegetable and dumping soup.

Ingredients

  • 1 tablespoon toasted sesame oil
  • 5 cloves garlic or 1 1/2 tablespoons garlic -minced
  • 1/2 tablespoon minced ginger or 1/2 teaspoon ginger powder
  • 1 zucchini - diced
  • 1 red bell pepper - diced
  • 3 green onions - sliced
  • 32 ounces chicken broth
  • 1/2 teaspoon salt
  • Dash of ground black pepper or Szechuan pepper
  • 9 ounces dumplings - about 10 premade dumplings of choice

Instructions

  • In a medium/large pot, add sesame oil, garlic, ginger, zucchini, bell pepper and green onions and sauté until fragrant.
  • Add the chicken broth, salt and pepper and bring to a boil then reduce to a simmer and simmer for 5 minutes.
  • Add dumplings and cook until they are cooked through, time will vary per dumpling and if they are frozen or fresh. They will float when they are done.
  • Serve and enjoy.
