Wineless Shrimp Scampi

This shrimp scampi has plump shrimp with pasta that is bathed in a buttery, garlic and lemon sauce.

Ingredients

  • 1 pound pasta angel hair, spaghetti or fettuccini
  • 8 cloves garlic minced
  • 2 tablespoons salted butter
  • 2 tablespoons olive oil
  • 2 pounds shrimp peeled and deveined
  • 1/2 cup chicken stock
  • 2 tablespoons lemon juice
  • zest of half a lemon optional
  • pinch of salt
  • pinch of black pepper
  • 1 teaspoon Italian seasoning or pizza seasoning
  • optional 1/4 teaspoon red pepper flakes
  • Parmesan cheese for on top

Instructions

  • Boil pasta in salted water according to package directions.
  • In a large pan, add garlic with butter and olive oil.
  • Add shrimp and sauté until shrimp is almost cooked through.
  • Add chicken stock, lemon juice, lemon zest (optional), salt, black pepper, Italian seasoning and optional red pepper flakes.
  • Add the pasta to the shrimp and sauce and mix it all together.
  • Serve with parmesan cheese on top and enjoy!
