Wineless Shrimp Scampi
This shrimp scampi has plump shrimp with pasta that is bathed in a buttery, garlic and lemon sauce.

Ingredients

pound
pasta
angel hair, spaghetti or fettuccini

cloves
garlic
minced

tablespoons
salted butter
2
tablespoons
olive oil

pounds
shrimp
peeled and deveined
1/2
cup
chicken stock
2
tablespoons
lemon juice
zest of half a lemon
optional
pinch
of salt
pinch
of black pepper
1
teaspoon
Italian seasoning or pizza seasoning
optional 1/4 teaspoon red pepper flakes
Parmesan cheese for on top
Instructions
Boil pasta in salted water according to package directions.
In a large pan, add garlic with butter and olive oil.
Add shrimp and sauté until shrimp is almost cooked through.
Add chicken stock, lemon juice, lemon zest (optional), salt, black pepper, Italian seasoning and optional red pepper flakes.
Add the pasta to the shrimp and sauce and mix it all together.
Serve with parmesan cheese on top and enjoy!
