Chewy Almond Cookies

These chewy almond cookies have almond extract and almond flour in them, which makes them delightfully delicious!

Ingredients

  • 1/2 cup salted butter - softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon almond extract
  • 1 cup almond flour
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/3 cup sugar - for rolling cookie dough in

Instructions

  • Preheat oven to 350 F.
  • Add the softened butter and sugar together in a mixing bowl and blend until butter is pale yellow.
  • Add in the eggs and almond extract then blend well.
  • Add the almond flour, all purpose flour, baking soda and salt and blend together until a cookie dough forms.
  • Dough will be a little sticky but manageable in your hands. add a little more flour if dough is too sticky.
  • Roll dough into balls around 1 inch for small cookies and 2 inches in diameter for large cookies.
  • Add 1/3 cup of sugar to a small bowl.
  • Roll dough balls in the sugar and place on a greased or lined cookie sheet.
  • Bake for ~8 minutes for small cookies and ~10-12 minutes for large cookies.
  • Let cookies cool slightly on the cookie sheet after removing from the oven then place on a cooling rack and enjoy.
