Pumpkin Muffins with Streusel Topping

Delicious bakery style pumpkin streusel topped muffins!

Ingredients

  • 1 1/3 cup sugar
  • 1/2 cup salted butter - melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup pure pumpkin puree
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/4 cup milk
  • Streusel Topping:
  • 1 cup flour
  • 1/2 cup sugar
  • 2 teaspoons cinnamon
  • pinch of nutmeg
  • pinch of salt
  • 6 tablespoons salted butter - melted

Instructions

  • Preheat oven to 350 F.
  • Line muffin tin with liners or grease tin well.
  • In a large mixing bowl, add sugar, melted butter, eggs, vanilla, pumpkin, cinnamon, ginger, nutmeg, cardamom, flour, salt, baking powder and milk then mix well.
  • Add all streusel topping ingredients together in a separate bowl until a crumble forms.
  • Spoon batter into a lined or greased muffin tin so it is roughly 2/3 of the way full then sprinkle the tops of muffin batter with the streusel topping.
  • Bake muffins for about 18-20 minutes or until the tops of muffins spring gently back when pressed on with your finger or a toothpick can be inserted and come out clean.
  • Remove muffins from oven and enjoy!
