Caribbean Sheet Pan Dinner

This easy, healthy and flavorful sheet pan dinner is a delicious way to get dinner on the table with minimal work!

Ingredients

  • 1 plantain - peeled cut into chunks
  • 3 bell peppers- any color cored, cut into chunks
  • 2 small zucchini - cut into chunks
  • 1 red onion - cut into chunks
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons garlic herb pepper blend Fern Gully from spice theory
  • 4 boneless skinless chicken thighs or chicken breasts fresh or frozen
  • Pinch of salt - optional

Instructions

  • Preheat oven to 425 F.
  • Cut all vegetables and place in a large bowl, then add olive oil and 1 tablespoon of the garlic herb pepper blend and mix together so all vegetables are coated.
  • Pour veggies onto a parchment paper lined or greased cookie sheet.
  • Add the chicken thighs or breasts to the pan between or on top of the vegetables.
  • Sprinkle the remaining seasoning on top of the chicken, along with a optional pinch of salt.
  • Bake for 1 hour.
  • Dish up vegetables with the chicken and enjoy.
