1/2poundshrimp - about 8 jumbo shrimppeeled and deveined
2teaspoonsolive oil
1/2 to 1teaspoonjerk seasoning - depends on your spice preference
1lemon or lime - cut in half
1mango - peelseed removed and diced
1/2handful of fresh cilantro - chopped
1green onion - thinly sliced
Pinchof jerk seasoning
Pinchof sugar or little drizzle of honey
Instructions
Add olive oil to medium or large pan.
Add shrimp and sprinkle with jerk seasoning.
Sauté until shrimp is almost cooked, then squeeze half of the lemon over top.
Remove shrimp from the heat and prepare the mango salsa.
Dice mango, chop cilantro and green onion and mix together with jerk seasoning and sugar or honey then squeeze the other half of the lemon into the salsa, you can use a little of the half lemon's juice or a lot depending on acid preference.
Serve shrimp on top of the mango salsa and enjoy together.
