Butter Beef Spring Rolls
These butter beef spring rolls have caramelized butter beef, lettuce, carrots, cucumber, rice noodles, cilantro and peanut dipping sauce.

Ingredients
For the beef:

pound
thinly shaved beef - I use shabu shabu style sliced beef
For the butter beef sauce:

garlic - minced

rice vinegar

soy sauce - I love using dark soy sauce

green onion - thinly sliced

lime juice

toasted sesame oil - I love black sesame oil

fish sauce

sriracha

butter - for cooking the beef in
For the spring rolls:
Lettuce - cut into leaf sections
no hard parts, just the soft leaf
Cilantro - chopped or leaves separated
Cucumber - julienned
Carrots - shredded
Rice noodles - cooked according to package directions and then cooled
Rice wraps - spring roll wrappers
For the peanut dipping sauce:

peanut butter - use sunflower butter or tahini if you have a peanut allergy

Dash fish sauce

chopped peanuts - optional
Instructions
Add all of the butter beef sauce ingredients, except the butter into a large bowl.
Add the thinly sliced beef to the sauce and mix around.
On a griddle or in a large skillet, add the beef along with the butter.
Cook until each side of the beef is cooked and caramelized.
Set beef aside while you prepare the other ingredients.
To roll the rolls, dip rice wrapper into water as the rice wrapper package directs.
Add a lettuce leaf, cooked butter beef, cilantro, cucumber, carrots and rice noodles and then roll up then fold and seal the ends.
To make the peanut dipping sauce, add all ingredients except the chopped peanuts into a small bowl and mix until smooth.
Add chopped peanuts on top.
Serve the butter beef rolls with the sauce and enjoy.
