Blackberry Lime Sour Cream Cupcakes

These Blackberry Lime Sour Cream Cupcakes with blackberry lime cheesecake frosting are a great berry cupcake option.

Ingredients

  • Zest of 2 limes or 1/2 teaspoon lime oil
  • 1 1/3 cups sugar
  • 6 tablespoons butter - salted
  • 2 eggs
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 3/4 cup blackberries - chopped
  • 1/2 teaspoon blackberry flavoring optional

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, add lime zest or lime oil, sugar, butter, eggs, sour cream, lime juice and blackberry flavoring (if using) then mix well.
  • Add flour, baking powder, salt and milk then mix well.
  • Gently stir blackberries into batter.
  • Pour into a lined cupcake tin.
  • Bake for ~ 18 minutes, press on center of cupcake and if it gently springs back then it is done.
  • Let cupcakes cool completely before frosting.
