Pumpkin Seed Romesco Sauce

A delicious variation on romesco sauce that uses pumpkin seeds.

Ingredients

  • 16 ounce jar of roasted red peppers - drained
  • 4 cloves garlic
  • 1 cup pepitas unsalted, unshelled pumpkin seeds
  • 1 teaspoon salt
  • 1 teaspoon blackened seasoning
  • 1/2 teaspoon paprika
  • 3 tablespoons red wine vinegar
  • dash of cayenne pepper
  • pinch of sugar

Instructions

  • Add all ingredients together then blend until smooth.
  • Use as desired and keep refrigerated for up to a few weeks.
