Chai Spice Cookie Recipe

These chai spice cookies have all of warm and delicious flavors of chai tea in a soft and chewy cookie.

Ingredients

  • 1 cup salted butter - room temperature
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoons ground cinnamon
  • 1 teaspoon cardamom
  • pinch of cloves
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 3/4 cup flour
  • 1 teaspoon vanilla extract

For the Chai Spiced Glaze:

  • 1 cup powdered sugar
  • pinch of salt
  • 1 tablespoon butter
  • 2 tablespoons milk
  • 1 teaspoon pumpkin pie spice
  • dash cardamom
  • splash vanilla

Instructions

  • Preheat the oven to 375 F.
  • In a mixing bowl, add butter and both sugars and blend well.
  • Add in the eggs and vanilla then blend well again.
  • Add the cinnamon, cardamom, cloves, pumpkin pie spice, salt, baking soda and flour and blend until a cookie dough forms.
  • Roll into roughly 1 1/2 inch balls to make ~36 cookies, then place cookie dough balls on a lined for greased cookie sheet and bake for ~8 minutes or until cookies are baked to your liking.
  • Allow cookies to cool while you make the glaze.
  • In a bowl, add the powdered sugar, salt, melted butter, milk, pumpkin pie spice, cardamom and vanilla together and blend until the glaze is smooth.
  • Dip the cookies tops in the glaze or spoon on glaze to each cookie.
  • Let the glaze set then serve and enjoy.
