- 1 pound turkey sausage
- 1 red onion
- 1 tablespoon garlic - minced
- 1 tablespoon olive oil
- 10 ounces kohlrabi pasta or shredded cabbage
- 1/2 cup water
- 16 ounces tomatoes
- 3 generous handfuls spinach
- 4 ounces feta
- Pinch of salt and pepper - to taste
Sauté the sausage, onions and garlic in olive oil.
Add in kohlrabi, tomatoes, water and spinach and cook until vegetables start to soften.
Add feta and stir until feta melts into the vegetables.
Salt and pepper to taste and enjoy.
