Kohlrabi Pasta With Sausage And Feta

Ingredients

  • 1 pound turkey sausage
  • 1 red onion
  • 1 tablespoon garlic - minced
  • 1 tablespoon olive oil
  • 10 ounces kohlrabi pasta or shredded cabbage
  • 1/2 cup water
  • 16 ounces tomatoes
  • 3 generous handfuls spinach
  • 4 ounces feta
  • Pinch of salt and pepper - to taste

Instructions

  • Sauté the sausage, onions and garlic in olive oil.
  • Add in kohlrabi, tomatoes, water and spinach and cook until vegetables start to soften.
  • Add feta and stir until feta melts into the vegetables.
  • Salt and pepper to taste and enjoy.
