Chai Spiced Coffee Cake

This chai spiced coffee cake features a delicious coffee cake with a chai spiced crumble on top with a vanilla glaze. It's a family favorite!

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cup flour
  • 1 cup milk
  • Chai Spiced Crumble Topping
  • 1 cup flour
  • 1/2 cup sugar
  • 1 tablespoon cinnamon
  • 1/2 teaspoon cardamom
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup butter - melted
  • Vanilla Glaze:
  • 1 cup powdered sugar
  • 1 tablespoon melted butter
  • pinch salt
  • splash vanilla extract
  • 3 tablespoons milk

Instructions

  • Preheat the oven to 350 F.
  • In a large mixing bowl, add all cake ingredients into the bowl and mix well.
  • Pour cake batter into a grease 9 x 13 inch pan.
  • In small mixing bowl, make the crumble by adding the flour, sugar, cinnamon, cardamom, pumpkin pie spice and salt together and stirring well.
  • Add the melted butter and gently mix together so a crumble forms.
  • Sprinkle the top of the cake with the crumble evenly.
  • Bake the cake for ~45-50 minutes or until the cake is baked through in the center.
  • Remove cake from the oven and while it's cooling, mix together the glaze.
  • Add all glaze ingredients in a small bowl then drizzle over the cake before enjoying.
