Ranch Red Potatoes

Ingredients

  • 2 pounds red potatoes - washed and diced skins left on
  • 3 tablespoons olive oil
  • 1 package ranch seasoning
  • 1 teaspoon salt - plus more to taste

Instructions

  • Preheat oven to 425 F.
  • Wash and chunk up the red potatoes in bite size pieces, leave the skins on.
  • Lay the diced potatoes on a baking sheet with parchment paper or silicone baking mat under them.
  • drizzle tops with olive oil, then sprinkle ranch seasoning on tops, followed by salt.
  • Toss the potatoes around so they are evenly coated.
  • Bake for 40 minutes, flipping over after cooking for about 30 minutes.
  • Sprinkle with salt.
  • Enjoy!
