Ingredients

red potatoes - washed and diced
skins left on

tablespoons
olive oil
1
package ranch seasoning
1
teaspoon
salt - plus more to taste
Instructions
Preheat oven to 425 F.
Wash and chunk up the red potatoes in bite size pieces, leave the skins on.
Lay the diced potatoes on a baking sheet with parchment paper or silicone baking mat under them.
drizzle tops with olive oil, then sprinkle ranch seasoning on tops, followed by salt.
Toss the potatoes around so they are evenly coated.
Bake for 40 minutes, flipping over after cooking for about 30 minutes.
Sprinkle with salt.
