Peanut Butter chocolate chip & cashew cookies

Ingredients

  • 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 2/3 flour or gluten free baking flour
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1/2 cup coconut sugar
  • 1/3 cup brown sugar
  • 1/3 canola oil
  • 1/4 cup peanut butter
  • 1 tsp vanilla
  • 1/3 cup chocolate chips
  • 1/4 cup cashews
  • Extra sea salt to sprinkle on top after baking.

Instructions

  • Preheat oven to 375 F.
  • Makes ~20 cookies.
  • Mix oil and sugars.
  • Add the eggs, peanut butter and vanilla.
  • In separate bowl combine flours, baking soda and salt.
  • Pour the dry ingredients into the wet and mix.
  • Add chocolate chips and cashews.
  • Make 1 tablespoon balls.
  • Bake for ~7 minutes.
  • Sprinkle with sea salt on top after.
