Chocolate Birthday Cake

Ingredients

  • 1 cup butter
  • 2 1/2 cups semi- sweet chocolate chips - divided
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 3 egg yolks
  • 1 tablespoon vanilla
  • 2 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 tablespoon lemon juice
  • For the chocolate butter cream frosting:
  • 1/2 cup butter
  • 3 cups powdered sugar
  • pinch of salt
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3 tablespoons milk

Instructions

  • Pre- heat oven to 350 F.
  • Add milk and lemon juice to a bowl and set aside.
  • In a Microwave safe bowl, add butter and cook for 1 minute or until the butter is melted and hot.
  • pour 2 cups of chocolate chips into the butter.
  • Stir and let sit for 1 minute.
  • Chocolate chips should start to melt.
  • Microwave the butter and chocolate for 30 second intervals until the chocolate is melted.
  • Add brown sugar and white sugar to melted chocolate and butter mixture.
  • Add eggs, egg yolks and vanilla and blend until smooth.
  • In another bowl, combine flour baking soda, baking powder, and salt.
  • Stir well.
  • Add the flour mixture to the butter and chocolate mixture, along with the milk and lemon juice mixture and stir together.
  • Pour batter into greased cake pans.
  • Sprinkle the remaining 1/2 cup chocolate chip on top of cake batter.
  • Bake for 40-43 minutes or until a toothpick comes out clean.
  • For 2 - 9 inch round cakes bake for 25 - 28 minutes or until a toothpick comes out clean.
  • For the chocolate frosting:
  • Add softened butter, powdered sugar, salt, cocoa powder, vanilla and milk and whisk until smooth.
  • Frost cake when it's cooled.
