Healthy Blueberry Blender Muffins

Ingredients

  • 1 1/2 cups dry steel cut oats
  • 1 cup almond flour
  • 1/2 cup flour or gluten free baking mix
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 2 cups milk of choice
  • 1/4 cup brown sugar
  • 1/2 cup stevia
  • 1 tsp salt
  • 1 cup blueberries

Instructions

  • Pre-heat oven to 350 F.
  • Add steel cut oats, almond flour, flour or gluten free baking mix, eggs, baking soda, milk, brown sugar, stevia, salt and lemon juice to the blender and blend until smooth.
  • Place muffin liners into a muffin tin.
  • Pour the batter into each muffin tin and add ~ 4-5 blueberries on top of the batter and slightly pressed into the batter.
  • Bake for 20 minutes.
