Twice Baked Potatoes

Ingredients

  • 6 large russet potatoes
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 3 tablespoons milk
  • 1/2 cup green onions
  • 1/2 cup cheddar cheese
  • 1/2 cup sour cream
  • Black pepper

Instructions

  • Pre-heat oven to 425 F.
  • Wash potatoes and place them on a aluminum foil lined cookie sheet.
  • Bake for 60 minutes.
  • Remove from oven, cool slightly, cut in half and scoop out the centers.
  • Place centers into a large mixing bowl, add butter, salt and milk and blend until smooth.
  • Spoon mixtures back into potato skin shells.
  • Top with cheddar cheese, sliced green onions and bake for 15 minutes more.
  • Top with sour cream and black pepper.
