Tahini Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour
  • 1/2 cup flour gluten free baking mix will work too
  • 1/2 cup brown sugar
  • 1/3 cup stevia sugar cane baking blend
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2/3 cup tahini
  • 1 tablespoon vanilla
  • 2 eggs
  • 3/4 cup chocolate chips

Instructions

  • Pre-heat oven to 375 F.
  • Combine almond flour, flour, brown sugar, stevia, salt and baking soda together in a large mixing bowl.
  • Add the tahini, vanilla, eggs and stir everything together until a cookie dough forms.
  • Stir in chocolate chips.
  • Form into ~1 and a 1/2 inch cookie dough balls.
  • Place them on a parchment paper lined cookie sheet with enough room for them to spread out slightly.
  • Bake for 8 minutes.
  • Remove from the oven and let them cool slightly on the cookie sheet before moving to a cooling rack.
