Healthier Peanut Butter Cookies

Chewy and delicious peanut butter cookies! My favorite peanut butter cookie!

Ingredients

  • 1 cup almond flour
  • 1/2 cup flour gluten free baking mix will work as well
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 1/3 cup stevia sugar cane blend
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter
  • 2 eggs
  • 1 tablespoon vanilla extract

Instructions

  • Preheat oven to 375 F.
  • Add almond flour, flour, baking soda, sugar, stevia and salt and stir together.
  • Add peanut butter, eggs and vanilla extract and stir until a cookie dough forms.
  • Form into 24 balls and place on a parchment paper lined cookie sheet.
  • Press down on each cookie with a fork, then crossing the other way with the fork to form a grid shape on top.
  • Bake for 8 minutes. Let cool slightly before moving to a cooking rack.
