Easy Cheddar Broccoli Soup

Ingredients

  • 1/3 cup onions - diced
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 4 cups chicken stock
  • 3 cups broccoli - raw or frozen, roughly chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup cheddar cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons cream or milk of choice

Instructions

  • In a medium stock pot, add diced onions, butter and salt and stir over medium-high heat for 1-2 minutes or until they begin to soften.
  • Add chicken stock and stir.
  • Add broccoli and simmer for 4 minutes.
  • In a small bowl combine cornstarch and water.
  • Bring soup to a boil and whisk in the cornstarch.
  • Reduce heat to a simmer and stir in cheddar cheese, black pepper and cream until cheese is melted and well incorporated.
  • Serve
