In a pan, add ground beef, Italian seasoning, garlic powder and salt and cook until beef is all cooked.
Add 1-1/2 cups spaghetti sauce and mix into meat.
Add cottage cheese and 1/2 of the cheddar and mix again.
Spoon filling into each manicotti shell. You can fill a large ziplock bag with the meat mixture and snip a big end off one of the corners and pipe the mixture into the shells to make stuffing them easier.
Place the stuffed noodles in a glass baking dish and cover with spaghetti sauce and sprinkle with cheese.
