Broccoli, Quinoa and Pork Stir Fry

Ingredients

  • 1 pound pork tenderloin or chops cooked or raw
  • 3 green onions - diced
  • 2 tablespoons toasted sesame oil
  • 2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 3 tablespoons soy sauce
  • 1/2 teaspoons sriracha
  • 3 tablespoons honey
  • 1 pound frozen broccoli florets
  • 1/4 cup peanuts lightly salted
  • 2 cups cooked quinoa cook quinoa in chicken stock

Instructions

  • In a small pan, cook quinoa in chicken stock or salted water.
  • If using raw pork tenderloin - slice loin into 1/4 x 1 inch chunks and saute over medium high heat with a sprinkle of salt until cooked through.
  • In a pan, add green onions, toasted sesame oil and saute for 2 minutes.
  • Add cooked pork, garlic powder, ground ginger, soy sauce, sriracha, honey and broccoli.
  • Saute over medium high heat for 10 minutes or until broccoli softens and is cooked.
  • Add peanuts and quinoa and stir together.
  • Serve.
