Chicken Salad Stuffed Halloween Peppers

Ingredients

  • 2 large bell peppers- any color top sliced off and seeds removed.
  • 1 small chicken breast - cooked and chopped
  • 1 stalk celery - diced
  • 1/2 small apple - diced
  • 1/2 avocado chopped up
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil mayonnaise
  • 1 teaspoon lime juice
  • 1 cup romaine lettuce - chopped

Instructions

  • Add diced chicken breast, celery, apple, avocado, salt, pepper, mayo and lime juice in a bowl and stir.
  • Add Romaine lettuce and gently stir.
  • Serve in a bell pepper that has the seeds removed.
