Shakshuka

Ingredients

  • 2 tablespoons olive oil
  • 1 cup red onion
  • 4 cloves garlic - diced
  • 1 - 14.5 ounce can of diced tomatoes
  • 1 cup cherry tomatoes
  • 1 tablespoon za'tar spice blend
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/4 cup harissa paste or diced chili peppers - canned
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon sriracha
  • 9 eggs
  • 1/4 cup feta

Instructions

  • Add olive oil, onions and garlic to a pot with a wide opening. preferably 12-15 inches wide.
  • Heat to medium high and saute mixture for roughly 5 minutes.
  • Add diced tomatoes, za'tar spice, cumin, paprika, harissa or diced chili peppers, salt, pepper and sriracha. Stir for an additional 3 minutes.
  • Create small wells in the mixture and crack eggs into the wells.
  • Reduce heat to a simmer and cover with a lid.
  • Simmer mixture for ~12 minutes or until egg whites are set but yolks are still soft.
  • Sprinkle with feta cheese and serve.
