Preheat oven to 375 F.

Add cake mix, eggs, oil and peppermint oil to mixing bowl and stir until a wet dough forms. Spoon large spoonfuls of dough onto a greased or parchment paper lined cookie sheet.

Bake for 10 minutes.

Add the mint truffle in the center of the cookie and return to oven for 1 minute.

Melt white chocolate chips in microwave in 15 second intervals until melted. Add desired amount of green food coloring and drizzle over the tops of cookies. Enjoy!
