Healthy Apple Breakfast Cake

Ingredients

  • 1 Cup Almond Flour
  • 1/4 Cup Coconut Flour all purpose flour can be used in place of coconut flour if you don't have any.
  • 1 Cup Flour
  • 1 1/4 cups Coconut Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 Cup Vegetable or Canola Oil
  • 1 1/2 Cups Water
  • 3 Eggs
  • 3 Apples peeled, cored and diced into bite size pieces
  • 1 teaspoon Cinnamon
  • 3 Tablespoons Honey

Instructions

  • Preheat Oven to 350 F.
    Combine, almond flour, coconut flour, wheat flour, coconut sugar, salt, baking soda, baking powder, cinnamon, nutmeg and mix together.
    Add oil, water and eggs and mix the batter until it is smooth.
    In another bowl, add peeled and cored apple chunks with cinnamon and honey.
    Pour cake batter into a 9 X 13 baking dish.
    Sprinkle the batter with apples.
    Bake for 50 minutes or until a toothpick can be inserted and comes out clean.
