3cupsShredded Zucchini(you can slightly squeeze the water out of the zucchini by placing in a tea towel and squeezing with your hands but It does not need to be really dry)
1cupAlmond Flour
1 1/2cupssugar or sugar replacement of choice like Truvia Sugar Cane Blend, monk fruit sweetener, etc.
1cupCacao Powder or Unsweetened Cocoa Powder
1 1/4cupAll Purpose Flour or Gluten Free Baking Mix
1/2cupCoconut Oil
1tspBaking Soda
1tspBaking Powder
1/2tspSalt
2Eggs
1tspvanilla
1/4cupChocolate Chips
1 cup Milk
Instructions
Preheat the oven to 350. In a mixing bowl add the shredded zucchini, almond flour, cacao powder, flour, coconut oil, baking soda, baking powder, salt, eggs, vanilla and milk then mix well. If you want to avoid zucchini chunks blend with an immersion blender. Pour into a 9 x 13 baking dish and sprinkle the 1/4 cup of chocolate chips on top. Bake for 35 minutes or until middle slightly bounces up when you press on it, a tooth pick should come out mostly clean though some of the chocolate may be on it.
