Melt In Your Mouth Sugar Cookies

Ingredients

  • 1/2 cup salted butter - salted softened to room temperature
  • 2/3 cup sugar
  • 1/3 cup vegetable oil
  • 1/3 cup powdered sugar
  • 2 tablespoons corn starch
  • 1 tablespoon milk
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 and 3/4 cups flour
  • Frosting:
  • 1/4 cup salted butter - salted softened
  • 1 and 3/4 cups powdered sugar
  • 1/4 tsp salt
  • ~2 tablespoons milk slowly add until frosting is at desired consistency may use more
  • 1/2 teaspoon vanilla extract

Instructions

  • For cookies: preheat oven to 375 F.
    Mix butter, oil and sugars together until creamed and a pale yellow.
    Add eggs and milk.
    Mix flour, salt, corn starch and baking soda in separate bowl.
    Combine with butter mixture. blend until smooth.
    Refrigerate dough for 20 minutes or until firm.
    Roll into balls then press down slightly on them or roll out dough with a rolling pin and use a cookie cutter.
    Bake for 8-10 minutes. The cookies will still be soft when pulled out of the oven, don't worry about them being underdone they will firm up when cool.
    To make frosting:
    Cream the softened butter, add powdered sugar, salt and slowly add the milk until it's nice and fluffy. May take more or less milk to get perfect consistency. add a few drops of food coloring to get desired color.
    Frost cooled cookies and enjoy.
    Pro tip: Freeze cookies briefly before eating them for an even better texture.
