Healthier Cinnamon Crumb Cake

Delicious healthier crumb cake made with almond and coconut flours.

Ingredients

  • 1 cup almond flour
  • 1 cup all purpose flour
  • 1/4 cup coconut flour
  • 1 cup coconut sugar
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk with 2 tablespoons white vinegar mixed in
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup vegetable oil

For the crumb topping:

  • 1/4 cup all purpose flour
  • 1/4 cup cold butter cut into small cubes
  • 1 teaspoon cinnamon
  • 1/4 cup coconut sugar

For the Glaze:

  • 1/2 cup powdered sugar
  • 2 tablespoons water
  • pinch salt
  • 1 teaspoon butter - melted
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 325 F.
  • Pour all cake ingredients into a bowl and mix all together.
  • Spray a 9 x 13 glass pan and pour batter in.
  • In a separate bowl, combine crumble topping ingredients and sprinkle on top of batter.
  • Bake for 40-45 minutes or until toothpick comes out relatively clean.
  • Combine the glaze ingredients in a small bowl and when cake has cooled slightly, pour over cake and serve warm or cold.
