Banana Chocolate Chip Muffins

Ingredients

  • 2 large ripe bananas
  • 1/4 cup peanut butter can be subbed with 1/4 cup vegetable oil
  • 3 Eggs
  • 1/2 cup non-fat Greek yogurt
  • 1 tablespoon Vanilla Extract
  • 3 tablespoons grated dark chocolate you can also use 2 tablespoons cocoa powder if you don't have any dark chocolate on hand.
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup brown sugar
  • 1 cup Flour or Gluten Free Baking Mix
  • 1/2 cup Milk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Pre-heat oven to 350 F
  • Mash bananas. brown sugar and peanut butter together,
  • Add eggs, yogurt, and vanilla.
  • In seperate bowl mix flour, baking soda, baking powder, salt, grated dark chocolate and chocolate chips.
  • Dump half of the flour mixture into the banana and egg mixture and mix, followed by half of the milk, mix, then remaining flour mixture, mix then milk. mix.
  • Fill cupcake liners 2/3rd the way full.
  • Bake for 15-17 minutes or until tops slightly spring back when touched or toothpick comes out clean.
