6cupsCooked RiceI used a wild rice blend but any blend will work
1/2 cupArtichoke Heartsmarinaded in oil
2 cupsWhite Mushrooms
4 Green onionssliced
6 Cloves garlicor about 2 Tablespoons minced garlic
2 Tablespoonsolive oil
1teaspoonSaltplus more to taste
1/2 teaspoonblack pepperplus more to taste
2LemonsSliced into wedges
1/2 cup shaved Parmesan cheese
Instructions
Prepare rice according to package directions.
Cook Mushrooms, garlic and green onions in olive oil for about 3-4 minutes on medium high heat or until green onions start to wilt and garlic toasts (adjust heat so garlic doesn't burn)
Add cooked rice, artichokes, salt and pepper and stir for 2-3 minutes or until rice is combined with all other ingredients.
Remove from heat and serve with lemon wedge (to squeeze over dish) and shaved Parmesan Cheese.
