Simple Roasted Beets

Peeled and cut into chunks

Instructions
Pre-heat oven to 425 F.
Peel beets and cut into large chunks (around 1 1/2 inch by 1 1/2 inch)
Toss beets in salt, pepper and olive oil.
Put onto a shallow metal baking pan and Roast for about 40 minutes or until a fork can easily go through a beet chunk.
