Easy Steak Fajitas

Ingredients

  • 2 Pounds Beef Steak- cut of Choice, preferably something without a bone I like to use Petite sirloins because they are inexpensive and still taste great in this recipe
  • 3 Tablespoons olive oil
  • 1 Tablespoon Salt
  • 2 teaspoons chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 large onion Sliced into strips
  • 1 Red Bell pepper Sliced into strips
  • 1 Yellow Bell Pepper Sliced into strips
  • 1 Lime

Instructions

  • Mix together the Salt, Chili Powder, Cumin and Garlic Powder in a small bowl.
  • Sprinkle both sides of the steaks with the spice blend, using about 3/4ths of the mixture.
  • Preheat a frying pan on medium high heat and add 2 Tablespoons Olive Oil.
  • Sear Steaks in Frying pan on medium high heat and let sit for roughly 4-5 minutes before turning over (adjust heat if they start to burn) and continuing cooking for 3-5 minutes more. This should get your steaks to a medium rare state. Adjust cooking time as needed or desired.
  • Let Steak rest before thinly slicing.
  • Slice up onions and Peppers into strips. Sprinkle vegetables with 1/4 of the spice mixture.
  • Heat 1 Tablespoon of Olive oil in a frying pan and cook the onions and peppers over medium high heat for about 5-6 minutes. Reduce heat if they start to burn. They should be slightly softened yet still firm. Once done cooking squeeze the juice from one lime over mixture.
  • I would suggest serving on warmed corn or flour tortillas and top with Fresh Cilantro, cojita cheese, Salsa, sour cream and guacomole.
