Sugar Cookie Tart

Sugar cookie base, pudding filling and fresh berries! Delicious!

Ingredients

  • 1/2 cup butter - on the firmer end of room temperature
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract or flavoring
  • 1 1/4 cups flour
  • 1 large package of instant vanilla pudding - follow directions for a pie filling
  • OR
  • 3 cups pastry cream
  • Fresh berries or fruit

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, add butter and sugar and cream until blended.
  • Add salt, vanilla and flour and mix until a cookie dough forms.
  • Grease tart shell.
  • Roll out the dough to desired thickness and place in a tart shell, press into shell as best you can.
  • Take a knife and run it around the edge so you have a smooth edge.
  • Place parchment paper on the inside of the shell and fill with dried beans or baking stones to prevent the tart shell from shrinking.
  • Bake for 15 minutes.
  • Remove the beans and parchment paper and bake for another 5-7 minutes.
  • Let the shell cool thoroughly.
  • Mix together the pudding and pour into cooled tart shell.
  • Top with fresh fruit, let pudding set and enjoy!
